Seriously, my lunch rocked. I skipped eating lunch at Rotary today (ummm, maybe the healthiest option I have seen yet, but still not great) in favor of creating a sandwich I have been thinking of since Tuesday.
Here you have it - Grilled Turkey Pita with Apple, Cranberries and Brie.
(should have snapped a photo, but I ate it too quick!)
Smear the insides of two pita half with brie cheese (I used Wee Brie that comes in single serve wedges like Laughing Cow). Stuff pita with thinly sliced apple, a few slices of turkey and a few dried cranberries.
Place sandwich in a pre-heated grill pan, cover with tin foil and place something heavy on top to press the sandwich. Cook until browned and flip.
Devour.
Delicious.
If I am to be honest with you, no - I do not know where the turkey came from. I am bad, I know.
