tah chin

A few weeks ago, Nic and I headed down to my co-workers place for a Persian lunch that her husband and she prepared for us.  They made us a few delicious dishes, but our favorite was a rice and chicken casserole called Tah-Chin.

With some time on our hands this past weekend, we decided to make this dish ourselves.  With most of the ingredients on hand, why not?  The only item we had to get was saffron.  Holy cow.  Saffron is one expensive spice!  I was not really surprised, as Steph and Ali get their saffron from his parents in Iran where it is much cheaper.

I really didn't think we'd find it in our rinky dink town, but Wal-Mart had some.  Albeit Spanish Saffron...  I was sure if I'd be committing a sin by using it, but decided to give it a go.  (After consulting with Ali, I felt reassured that the world would not stop spinning if I used it.)  At $15 a pop...this had better be good.



Oh my, what  a dish!  A perfect meal for a Sunday night dinner (takes a while to prepare), this meal be on our menu again in the near future.
