some food

Well I am officially in the heart of my busy season! I have a Relay this weekend and then one two weeks later. So clearly I am too busy to take photos of food.

Which is too bad because then today you could have seen all the crap I ate! Don't get me wrong, my 'base' meals were good, but the snacks...pretty sure I ate my weight in Kellogg's "Multi Grain - All Bran" crackers. But they have a NuVal score of 32 - which is really high for a cracker, so that is good, right?!

{Side note - do you have NuVal in your grocery store yet?? It is an amazing food rating system that helps you choose a healthier option when comparing similar products. Nic and I always check out NuVal scores at our Hy-Vee and are disappointed when we do grocery shopping at stores without NuVal.}

I did manage to snap a few photos of my meals today and wanted to share the following...

Breakfast::

How does an apple pie green monster sound to start the day??! It was delicious!

In the mix -

  • 2 big handfuls spinach
  • 3/4 gala apple - chopped
  • 3/4 cup soy milk
  • 1/2 frozen banana
  • dash cinnamon, nutmeg & ground cloves
Dinner::

Inspired by a few blogs, I decided to whip up a quick quiche for dinner. I used three totillas for the crust and topped with the following (after sautéing for a few minutes):

  • 1 carrot - shredded
  • 1/4 red onion 
  • 1 clove garlic
  • 1.5 small zucchini
  • 1 ear corn 
  • 1/2 green pepper
On top of that, I poured a mixture of three eggs and 1/2 cup plain greek yogurt. I topped it all off with some feta crumbles and baked at 375 for a loooong time. Pour Nic, didn't get to eat until after 8!

But a self proclaimed hater of quiche, Nic went back for seconds and thirds and cleaned out the pan! Apparently he doesn't hate my quiche!

And just because I felt like eating a big bowl of chocolate, I threw some ingredients in a bowl and came up with a root beer cake. It was actually pretty good - a bit underbaked, but I still managed to eat two big bowls of it topped with vanilla ice cream.

  • a little less than 1/4 cup veg oil
  • 1/8 cup white sugar
  • 1/8 cup brown sugar
  • 1/4 cup cocoa
  • 1 cup root beer
  • 1 egg
  • 3/4 cup flour
  • 3/4 tsp baking soda
Mix oil, sugars, cocoa, root beer and egg. Mix flour and baking soda with a 1/2 tsp salt. Fold root beer mixture into flour mixture.  Bake at 325 for 25ish minutes.

This was not a sweet cake, so the ice cream was very necessary. YUM.
