hello love-ah

So I made these cookies the other day when I was having an intense craving for chocolate. So.glad.I.did. I looked up a few recipes for chocolate oatmeal cookies, but as I always do - I just winged it and thankfully they turned out!

These are a healthier cookie, but I think any butter-loving-guest to Chez-P.S. would enjoy them.  I am including the nutrition facts, but that is just an approximate - I have no idea how much gooey peanut butter I actually stuffed into these lovely bites of deliciousness.

Peanut Butter filled Chocolate Oatmeal Cookies

What I used::
1/2 cup WW pastry flour
1/2 cup oatmeal
1 T chia seeds
1/2 t baking soda
1/4 t salt
1/4 cup cocoa powder
1/2 cup apple sauce
1/4 cup honey
2 T sugar
1 t vanilla
PB for filling

Pre-heat oven to 350.

Mix the first 5 ingredients in a medium bowl. In another bowl mix the apple sauce, honey, sugar and vanilla. Stir into dry ingredients. Let stand for a few minutes. (When I substitute honey for sugar in recipes that call for all sugar, I like to add some chia seeds to help absorb some of the extra liquid.  I have NO IDEA if these really works, but chia seeds are always good, right?)

Using about half to 3/4 of the dough, make 12-15 cookies, creating a small indent in the center of each. Spoon a little bit of peanut butter into each center (about 1 tsp each maybe?). Cover the peanut butter with the remaining dough.

Cook for about 12 minutes. Enjoy!
