pantry & freezer week - day 2

What a whirlwind of a day!  I am really attempting to get on a better sleep schedule so I can eek out a few early morning workouts now that the weather is getting warmer (crap - I totally just jinxed that one, didn't I?!)  I managed to get up early enough to take Maia on a 3 mile walk and had the forethought to get breakfast working while we were out.

Super slow cooked steel cut oats was on the menu for this morning.  Right before we headed out the door I threw the following into a pot and set the heat to super low:

  • 1/2 frozen banana
  • 1/2 cup (or more) frozen whole cranberries (left over bag from Thanksgiving)
  • 1/4 cup steel cut oats
  • 1/2 cup water
  • 1/2 cup soymilk
  • 1 T or so chia seeds
When we returned (about 45 minutes later) I cranked the heat to finish cooking them and squeezed in the juice of 1/2 orange and some pulp (from that bag of reduced priced citrus fruit).  A splash a vanilla and a sprinkle of almonds finished them off.  Delicious!

Over my lunch I headed out for a beautiful 5.5 mile run (so excited for Spring to officially be here!) and a quick core session.

Lunch was the same as yesterday minus the turkey and with a grated carrot instead of a whole roasted carrot.

Thanks for your comments on yesterday's post about whether eating out on work's dime should be allowed during out eat-in month challenge.  I thought I would be faced with that decision this afternoon as I was heading out for a meeting, but thankfully it didn't last too long and I was able to whip something up at home.

I had plans for what promised to be an interesting creation, but after my dear friend Leah found out the gender of her July baby - she had me craving pancakes all day!  You have to go and check out her blog to see how they found out if they were having a boy or a girl - too cute!

Three blueberry cornmeal pancakes were whipped up in no time and consumed entirely way too fast with way too much syrup and honey.  They were quite tasty though!

Earlier I whipped up a smoothie for the trip down to my meeting (about a 1.5 hour drive) which was also created in honor of Leah's future baby boy:

  • blueberries
  • baby spinach
  • frozen banana
  • soy milk
  • 1/2 scoop vanilla protein powder

Hopefully tomorrow will bring some more creative dishes!

  1. Those pancakes look amazing! I find that the more miles that I run in a week, the more I crave pancakes :)
