busy life

Life has been pretty busy lately.

Good, but busy.

The day begins at 4:30AM and ends abruptly at 9:00PM when I can no longer keep my eyes open.

I have just enough time in the day to get all the necessary things done (work, work, run, lift, eat, maybe walk the dog).

But not enough time to get everything I want done (blog, create, sit, walk, cook).

I have a lot of things that I want to blog about, but can't seem to find enough time to actually blog.

So here are some posts that I am hoping to get up by Sunday:

  • Fargo Marathon training update
  • Carrot, Apple Oatmeal Bread/Muffins
  • 15 minute ab routine - guinea pigs needed!
  • Lentil Sloppy Joes
  • and maybe a recap + recipe of our first Farmer's Market

Have you ever put caramelized onions on pizza? Can I say holy epic?

I picked up an Amy's No Cheese pizza the other day after work that had caramelized onions + roasted red pepper + artichokes on top, and although I was very disappointed with the lack of toppings (the pizza was very bare), the caramelized onions totally won me over.

I set out to recreate a much better version the other week and was quite happy with the results. Minus the nasty canned artichoke hearts.

There is really no recipe to share - just top your favorite pizza crust with caramelized sweet onions (I think I used three - four huge vidalias that had been coarsely chopped and cooked over low heat for an hour-ish), and roasted red peppers.

No one was missing the cheese on this pizza!

  1. Figs and caramelized onions are delicious together on pizza. (With a bunch of goat cheese too. Mmmm....)

  3. I actually think I prefer to be super busy. I know it's exhausting, but I like feeling really,really efficient.

    Also, I am a willing guinea pig for an ab workout....

  4. I've had Amy's cheeseless pizza before and I acutally thought it was too sweet - and you are right about not enough toppings. So the next time I bought it I added green olives, broccoli and feta cheese before baking. Much better.
