granola

So I think I have struck gold with a granola recipe that I created last weekend.

Per usual, I began with a basic idea/recipe in my head and then started adding things as I thought of them.

Intuitive cooking is a good term for describing my madness in the kitchen.

Anywho, this granola was AMAZING. Think of your cute Grandma's warm, right-out-of-the-oven oatmeal raisin cookie --- in granola form. Like I said, amazing.

The recipe is healthy, contains no oil, butter or anything of the like. Yet it is crunchy, has some bigger chunks, holds up well and stays crunchy in a bowl of almond milk, and is simply irresistible.

The day after I made the first batch, I brought some up to our friends John and Diana to try. And within three minutes we were brainstorming a name for a granola company, logo and John was crunching numbers for me. :)

Kidding.

Sort of.

The instant I got home, I whipped up another batch, with some variations of course, just to make sure the first go round wasn't a fluke.

Nope.

Okay, one more try (different flavor again).

Amazing.

I have three nearly empty containers of granola sitting on top of my fridge. Nic and I have decided that they represent a bright future. Ha. Wouldn't that be cool though?

Anyway, I am chomping at the bit to make up some different flavor combos.  So far I have made:

  1. Oatmeal Raisin Cookie
  2. Banana Bread (seriously tastes just like banana bread!!)
  3. Peanut Butter Chocolate Chip 

And I am planning on making:

  1. Carrot Cake
  2. Some sort of espresso/mocha granola
  3. Peanut Butter Cookie
  4. Chocolate Chip Cookie
  5.  White Chocolate Cranberry Crunch
  6. S'Mores

*Edited to add YOUR flavor ideas that I will make:
  1. White Chocolate Macadamia Nut
  2. Chocolate Coconut with a Caramel Drizzle 

If you are still reading this post about granola...what type of flavor would you like me to test out? Who knows, if you come up with a combo that really intrigues me, I might send you a few to taste test!

Who knows, if my dream comes true, you might be able to say you helped to shape the future of XYZ Granola! :)

  2. White chocolate macadamia! That's my favorite clif bar/luna bar flavor and I bet it would be great for a granola!

    @Kara - YUM - that is officially on the list! That was my go to cookie flavor whenever we stopped at that one cookie shop located in malls, I can't think of the name right now...GAH!

  4. What about something with berries for summer? Maybe strawberries and cream? Or cranberry orange?

    Oh oh oh, and going off Luna bar flavors: chocolate coconut, like a Samoas girl scout cookie.

    I volunteer to be a tester, too! Mmm.
