It has been nearly a week since I have been able to sit down and actually think about posting a blog post. How does that happen?! Well I guess a full day on Monday, combined with a three day staff retreat, getting ready for a Relay on Friday and having the actual event yesterday, can keep a girl pretty busy! I am looking forward to things slowing down a bit, but I really don't think that is going to happen. Oh well - it's life.
So, remember when I made this delicious pizza? Well that night, I reserved about 1/3 of the dough and played around with a dessert, which will be called:
Hot Blueberry Cupcake Pie
Say what?! Trust me on this one, and take a look at it's deliciousness...
So here's what I used and what I did:
1/3 whole wheat oatmeal pizza dough
1 T honey
1 T ww flour
1 cup frozen blueberries
1/2 cup frozen peaches
1.5 T chia seeds
1/2 t vanilla
2T sliced almonds
1/2 t sugar
For the crust - knead in additional 1 tablespoon flour and honey. Press into two greased muffin cups. (This is a perfect amount for two). Bake at 350 for 7 minutes.
Over medium-high heat, bring blueberries and peaches to a simmer. Simmer until thickened. Remove from heat and add chia seeds and vanilla. Set aside and let the chia seeds do their magic - thickening the fruit into a pie like consistency.
Once the fruit has thickened, add to the slightly baked crusts. We had more than enough for the two crusts - we topped our morning oats with it the following morning, YUM.
You could skip this step, but when I made the original recipe, I mixed the almonds and sugar together and topped each cupcake. I was envisioning a nicely browned sugared-almond topping, but that didn't happen. Maybe next time....
Place cupackes in the oven and bake for 15 minutes. Finish under the broiler for a few seconds to brown the almonds.
Wait! Not done yet - we whipped up some banana soft serve to "frost" the cupcakes with.

Nic especially liked this dessert because it wasn't too sweet. I liked it as well, but felt the crust could have been a bit sweeter. I thought the crust was much better utilized as a pizza dough.
