Goooood Evening! It's been another whirl-wind day here at the PS household! Nic had to work this AM and I took advantage of the beautiful weather to head up to Iowa City to grab a coffee with Diana, talk about Paris, and hit up the farmers market! I walked away with a few goodies, that I am excited to share with you. This afternoon involved a lovely 8-mile run for me, and yard work for him. :)
But in the meantime, I want to share with you the awesome burgers I made tonight...
I received a free sample of lentils in the mail the other week, and after seeing a few recipes around the blog-o-sphere lately for lentil burgers, I thought I'd give them a try.
I looked at quite a few different recipes, but ultimately decided to pretty much wing-it. So here you have it, my version of lentil burgers!
Cumin Lentil Burgers
You'll need::
1/2 cup dried lentils
1 cup water
1 carrot
1/4 onion
2 cloves garlic
1 jalapeno - seeded
1 t cumin
1 t parsley
salt and pepper
3/4 cup + 3 T panko
1 ear corn - de-kerneled
1 egg
1 T olive oil
Prepare lentils - rinse well, add lentils and water to a small pot and bring to a boil. Reduce to a simmer and cook 25 minytes (covered).
In a bowl of a food processor, add the carrot, onion, garlic, jalapeno, and spices. Process until finely ground. Add 3/4 of the cooked lentils and pulse a few more times. Remove to a bowl.
To the burger ingredients, fold in the remaining lentils, corn, egg bread crumbs and olive oil.
For into patties - this will make about 6.
Put burgers onto a greased, foil-lined cookie sheet. Bake at 350* for about 20 minutes, gently flip and bake another 20 minutes. (I forgot to grease my cookie sheet, so after the first 20 minutes, I broiled them on low until they were golden brown).
We served these on a bun up-top a bed o' spinach, with a few slices of avocado, yogurt and roasted red pepper hummus.
We have another winner! Besides the addition of a little more salt, I would make these the exact same way next time. These even get the Nic seal of approval!

Besides whipping up these burgers, I've been way busy in the kitchen with a few other experiments. Must go do some quality control - hope these are good enough to share with you tomorrow!
