typical saturday night

Nic and I always seem to be super busy on the weekends. If we aren't running/biking, working on projects (or just plain working), running errands, we are probably cleaning the house. Why is cleaning such a never ending chore? It seems that as soon as we get everything in order and my heart sings (my heart loves a clean house), I turn around and it is a disaster again. And I swear, it has nothing to do with my never ending cooking spree. I swear.

So this past Saturday night, after a long day of biking and running errands in Iowa City, Nic and I finally had a chance to just sit down, put our feet up and catch up on the season finale of Dexter. I instructed Nic to make sure I kept my butt on the couch and not to let me get up and do something. You see, I am notorious for starting a movie/show and within five minutes of starting it, I declare that some baked goods are necessary and we thus proceed watching whatever in five minute increments until I am done in the kitchen.

A.D.D. much?

Yeah. So Saturday, as hard as I tried to remain parked on the couch, I knew chocolate chip cookies would make the night perfect. I tried waiting just a few minutes to see if the craving would pass.

Heh.

Amazingly, when I asked Nic if he would like some chocolate chip cookies, he said yes! Normally, he shrugs it off and says he is fine. He is typically not a big sweets person, but lately he's been changing his tune. Hmmm....maybe he's preggers.

So chocolate chip cookies it was. Commence our typical Saturday night of trying to watch a show, uninterrupted...it was never going to happen.

Besides, I am totally on a quest to make a perfect vegan chocolate chip cookie with no fake butter or oil. I knew these wouldn't be it, but the end product was gobbled up in one episode of Dexter, so I thought they would be worth sharing.

Vegan Oatmeal Chocolate Chip Cookies

In the mix::

  • 1 cup oatmeal
  • 2 T ground flax
  • 2 T peanut/almond butter
  • 2 T coconut butter
  • 2 T chocolate chips
  • scant 1/4 t baking soda
  • and CRAP - some maple syrup, but we didn't write it down! I'd say probably about 2 tablespoons. Darn, guess I will just have to make these again!


Mix everything together and bake at 350* for 10 minutes.

They were seriously amazing, although not the perfect chocolate chip cookie I am looking for.

The quest continues...

  1. These definitely sound tasty. I've been wanting to try cooking with coconut butter and this might be a good way to try it out.
