sweet potato pasta with candied walnuts and blue cheese

I picked up these beautiful sweet potato noodles the other week while Nic and I were shopping around New Bo City Market. From Pappardelle's Pasta, these wide noodles didn't need much to dress them up into a simple, fancy-ish meal.

We cooked the pasta in salty water, drizzled it was a bit of garlic infused olive oil, and topped it with plenty of candied walnuts and chunks of sheep's milk blue cheese that we also picked up that day from New Bo Cheese.

The sweetness of the pasta and walnuts, paired with the complex creaminess of the blue cheese made for an excellent dinner.
