I had the usual oats for breakfast today, but added something that has been hanging out in our freezer for quite some time - blueberry/strawberry and yogurt popsicles. I made these for a game night that we had a long long time ago. Not sure why I haven't thought of adding these to oatmeal before!
Lunch at Rotary was another feast of foods that I wouldn't eat, so I hustled home to create this leaning tower or lentil burgers. Toasted bread, ketchup, mustard, onion, spinach and left over lentil burgers I made the other night. Plus some carrot scaffolding to hold this leaning tower of deliciousness up.
An afternoon snack attack struck around three, and I blended up a few frozen bananas, almond milk and a few spoonfuls of hot chocolate mix to create frozen hot chocolate. A perfect snack...enjoyed just as the first flakes of many inches began to fall.
Although not photogenic, dinner was a great use of leftovers - last night's dinner transformed into chili pizza on homemade crust.
The crust was amazing, slightly sweet (brown sugar) with a little chew (whole wheat flour). And of course I didn't write anything down...just threw a little of this and a sprinkle of that into the bowl. Meh.
I wasn't planning on making dessert, but an after dinner chocolate craving beat out my willpower.

- 2 T cocoa powder
- 1/8 t baking powder
- 3 T almond milk
- 1 T canola oil
- 1/2 t vanilla
