vegan night

Tonight's dinner was my February installment of challenging myself in the kitchen and cooking something outside of my comfort zone/cooking something I've never made before.

The cuisine - vegan!

Oh my gah.

If I had any remaining sorrows about being sidelined due to my knee...I was able to completely and utterly drown them out while eating dinner tonight. Each dish prepared out shined the previous and the best was definitely saved for last.

I want vegan night to be every night!

{I made the mistake of expressing that statement out loud, and was quickly informed by the husband that that is on the divorce list*. Bummer.}

Lentil Walnut Loaf

I followed Angela's recipe to a T. It was delicious! Nic and I both could have done without the raisins, however, that won't keep us from making this again. It did get two thumbs up from Nic and he said he would eat it again. I never ate meat loaf growing up (okay, maybe my dad made it once or twice, but it was never in the regular rotation), but made it a few times for Nic when we lived in the apartment. He said the texture was spot on, but could tell it wasn't actually meat loaf. I think it was the spices used as opposed to anything else and I would venture even your biggest meat eater might be fooled by this.

Creamy Roasted Tomato Soup

OMG amazing. By far the star of dinner - throw away your Mom's recipe and replace it with this, seriously. Okay, you can keep her recipe but just promise me you'll try this, okay?!

In the mix::

  • 4-5 roma tomatoes (1.11 pounds)
  • 1 dry pint grape tomatoes
  • 1 red bell pepper - cut into quarters
  • 1 large sweet onion - cut into quarters
  • 5 cloves garlic - peeled
  • 1/8 cup olive oil + 1/8 cup canola (you could use all olive oil...we were down to the very last of the jug)
  • 1 t sea salt
  • 1 3/4 cup low sodium organic veggie stock
  • 1 large bay leaf
  • pinch red pepper flakes
  • 1/4 cup chopped basil
  • salt & pepper to taste
  • cashew cream - optional

Preheat oven to 450*

Wash and cut the roma tomatoes in half. Spread the roma tomatoes, grape tomatoes, garlic cloves, onion and bell pepper onto a baking tray. Drizzle with oils and season with sea salt. Roast for 20-30 minutes, or until caramelized.

Transfer the roasted veggies into a stock pot. {I roasted my veggies this morning and then put them in to the fridge until I was ready to finish the soup.} Add veggie stock, bay leaf and red pepper flakes. Bring to a boil, reduce heat and simmer for 15-20 minutes uncovered.

Remove the bay leaves and add the chopped basil. Use an immersion blender to puree the soup until smooth. Season with salt and pepper.

The soup really doesn't need heavy cream (as called for in the original recipe) as it is souper (ha!) silky and smooth as is. That being said, no one will complain if the soup is extra creamy! I topped each serving with a dollop of cashew cream and dug in. OMG.

Cashew Cream
Soak about 1/2 cup raw cashews in water and place in the fridge overnight. When ready to prepare the cream, dump the water our and rinse the cashews. Place in a food processor with about one tablespoon water and puree until smooth - adding additional water a bit at a time until a creamy consistency is achieved.

Heaven. I am in coconut heaven. I prepared this recipe following this one exactly, minus the vanilla bean and I only made half of a batch. I even made my own coconut butter (for a measly $2!)

There were all sorts of omg-ing while I savored devoured two of these after dinner. I could have eaten the entire pan, but told Nic not to let me eat anymore until tomorrow.

Really, you should make these!  So easy and they will for sure impress anyone you share them with.

Dinner was truly a success - I am loving these monthly challenges and look forward to see what March brings!  Suggestions? We will be reuniting with the Dukes for March's meal - they we too cool for vegan night.

Those balls you see up there - they are a variation of my chocolate peanut butter balls. Quite tasty...I might just have to share the recipe with you!







*We really don't have a divorce list, I swear! We joke whenever either of us says something way out of line that if that thing were to ever really happen, it would be grounds for divorce. All in good fun people...all in good fun. We have full intentions of making it to at least five years and then seeing where we want to go from there...  :)

pantry and freezer week - day 11

Today was a much better day. Thanks for all the positive energy that was sent my way! I slept in instead of getting up at an ungodly hour to walk the dog. Necessary, however, I would really like to stick to waking up early to walk the dog and then having an uber productive day.

I had the usual oats for breakfast today, but added something that has been hanging out in our freezer for quite some time - blueberry/strawberry and yogurt popsicles. I made these for a game night that we had a long long time ago. Not sure why I haven't thought of adding these to oatmeal before!

Lunch at Rotary was another feast of foods that I wouldn't eat, so I hustled home to create this leaning tower or lentil burgers. Toasted bread, ketchup, mustard, onion, spinach and left over lentil burgers I made the other night. Plus some carrot scaffolding to hold this leaning tower of deliciousness up.

An afternoon snack attack struck around three, and I blended up a few frozen bananas, almond milk and a few spoonfuls of hot chocolate mix to create frozen hot chocolate. A perfect snack...enjoyed just as the first flakes of many inches began to fall.

Although not photogenic, dinner was a great use of leftovers - last night's dinner transformed into chili pizza on homemade crust.

The crust was amazing, slightly sweet (brown sugar) with a little chew (whole wheat flour). And of course I didn't write anything down...just threw a little of this and a sprinkle of that into the bowl. Meh.

I wasn't planning on making dessert, but an after dinner chocolate craving beat out my willpower.

Single Serve Gooey Brownie.
Do not share this with anyone, you will regret it after your last bite!

In the mix::

  • 1/4 cup whole wheat pastry flour
  • 2 T brown sugar
  • 2 T cocoa powder
  • 1/8 t baking powder
  • 3 T almond milk
  • 1 T canola oil
  • 1/2 t vanilla
{edit - I just made this again (February 25th) and cut down the oil to 1 teaspoon and it was still amazing. I also added a pinch of salt, which I am sure I did yesterday, just forgot to write it down. I baked it at 325* for 15 minutes and it was the perfect ratio of cooked v. gooey brownie. Holla for a healthier ooey gooey single serve brownie!}
    In a small bowl, mix dry ingredients. Stir in wet ingredients until blended. Bake at 350* for 17 minutes - until the sides are set but the middle is slightly jiggly.

    pantry and freezer week - day 9

    Today, I turned in my two weeks notice and put a down deposit on a lovely piece of land in Northern Minnesota...

    ...and then I shook myself awake from that dream and woke up from an amazing one hour nap. :)

    I love waking up super early, the rest of the day is always uber productive when that happens. Which is good - I needed a productive day. And being able to sneak in an afternoon nap is quite nice too...

    After my lovely nap, I lazily climbed into my running gear for a track workout - 400m repeats. This used to be the most dreaded workout in high school track for most people. I secretly loved 400 days. Whenever it was pouring rain, the entire girls track team piled on the track for repeat 400s. Us distance girls were the studs as we were always the last ones to leave the track.

    Stats::
    Warmup - 1.88 miles @8:51 pace
    400 pace - 7:34, 7:29, 7:17, 7:21, 7:17, 7:28, 7:05, 7:01, 7:40, 7:18
    I jogged .12 miles in between 400s at 9:15ish pace
    Cool down - .95 miles @ 9:56 pace
    Total distance - 6.63 miles
    Total time - 58:08
    Average pace - 8:46

    It was a great workout - the 400s were a little slow for my training plan, but with the knee pain last week, taking it a little easy was a good idea.  There were a few laps where I thought I would have to call it quits, but the pain never got too bad. Now, my calves are tiiiiight - it feels like the day after actually racing. Hopefully nothing a little foam rolling can't take care of.

    Food today was a lot of the same as the past few days:

    Breakfast - steel cut oats with banana and blueberries in an almost empty almond butter jar.
    Lunch - the same delicious sandwich that we had for dinner last night

    I snacked on a load of citrus around 3:30. One bruised and battered orange from our reduced price bag (almost gone!) and one of the moro oranges that we picked up on impulse during our last trip to Hy-Vee. Check this thing out!

    I wasn't too hungry after my run so I just put together a small salad and smoothie to refuel with.

    I topped the salad with lentil burgers with the last of our left over lentils from the night we made lentil tacos. To prepare I just threw in about 1 cup of lentils and 1/4 cup panko in a food processor for a few seconds. I formed this mixture into 4 small patties and rolled in more panko before popping them into a 400* oven for about 15 minutes (flipping once).

    They were a great salad topper!  I am hoping Nic doesn't snatch them for lunch tomorrow...

    The smoothie was just 5 ingredients and so refreshing!

    • 1 whole frozen banan
    • 1 whole peeled orange
    • splash almond milk
    • 1/2 t vanilla
    • pomegranate seeds - to top with
    Just give everything a quick whirl in the food processor and top with a small handful of pomegranate seeds. Enjoy!

    In other news - the random dessert I made last night? DELICIOUS! Definitely better cold and had the texture of pumpkin pie. Nic and I both loved it.  I imagine it would be even better with some freshly whipped cream on top. I will make these again...maybe in individual ramekins - that would be cute!

    Remember the discussion Nic and I had the other week - about adding a second dog to our family? Yeah, that is for sure not going to happen anytime soon.  Sorry to disappoint! :) Maia is a handful and I personally can not imagine walking two bratty puppies in the morning. I am so glad we slept on that idea for a few weeks, so glad.
